Sausage Gravy with Poached Egg Recipe


 Made this for breakfast this morning.  So easy,  so simple, and so DELICIOUS.  

I don't ever plan on what I'm making to eat.  I just make use of the things I have.  Whenever I'm making gravy,  it's always made from scratch, by using the oils from the meat.


Ok, let’s get straight to the recipe. 

Recipe for 2

You can always add more,  all depends on how much people you're feeding or how much your eating. 

I never measure my ingredients,  it's all about adding in how much you want. 


4 Sausage patties or ground Sausage 

Onion slices 

1 garlic ~ chopped 

1 tsp. all purpose flour

1/2 cup chicken stock 

Splash of whipping cream ~ all depends on how creamy you want your gravy

Mushrooms 

2 slices sourdough bread,  or use whatever you have 

2 eggs

Boiling water 

Salt and pepper 



Get your stove on and pans ready.  I used to pans. In your pan, while it's hot,  on medium heat add sausages.  Cook till lightly brown,  add onions and garlic, Cook till onions look soft.  Add in mushrooms. Cook for 2 minutes.  Add in flour. All you need is a little.  I just sprinkle it on to the pan, about 1/2 tsp. Stir till the flour is all together with the oils. About 5 minutes. While you're waiting you can boil a pan of water for the eggs.  While you waiting for the water to boil you can add in chicken stock to the sausage pan.  Make sure not too much or it will be soupy.  From the 1/2 cup, slowly add stock a little at a time.  Stir, cook until flour is cooked together.  Add a pinch of salt and pepper.  Not too much salt as the sausages are already salty. Add pepper. I add black and white pepper.  Turn down heat and keep stirring. 

Now, while your pan of hot water is boiling, sprinkle some salt into the water.  Your stove should be on medium heat.  Crack 1 egg into the hot boiling water.  Cook for about 1 minute. While that's cooking,  you can toast your bread.  I toasted mine in the airfryer,  just cause I don't have a toaster.   Depends on how runny you want your eggs. Once satisfied with your egg, scoop your egg with a spatula and put on the side. Do the same with the other eggs.  

Now, get ready to plate. 

I love plating my food beautifully, Instead of throwing everything in the plate. It just makes everything better. Also, I always clean as I go. Never leave dirty dishes and clean up your counter space.  You do all those while your cooking,  waiting for the food to cook, your life will be much easier.  Anyways....

You can get creative and plate how ever you want.  

I add my sausages on the bottom of the plate.  Add my poached egg, drizzle gravy on top.  I had some spinach and just chiffonade it. Sprinkled on the top for some color,  and nutrients.  I also added some vervain flowers for color and health benefits too. And now, ready to eat.  Add your favorite hot sauce if you're into spices like me.
